Bacon-Wrapped Halibut

Bacon-Wrapped Halibut

One of the benefits of living in Southeast Alaska is the availability of a diverse range of fresh seafood. It makes experimenting a bit more challenging and puts my creative brain to the test. It was time for me to think of something different. And then, I found my star ingredient. Bacon! This Bacon-Wrapped Halibut turns out flaky and full of bacon juice. These make you feel as if you should add bacon to your dinner every night!

Ingredients

4 (6-ounce) halibut fillets, skinned and trimmed
2 teaspoons Old Bay seasoning
2 teaspoons fresh dill, minced
4 slices quality thick-cut bacon
4 teaspoons extra-virgin olive oil
1 lemon, cut into wedges

Directions

Season the halibut with the Old Bay seasoning and dill. Wrap the bacon tightly around the middle of the fillet.

In a large nonstick skillet, heat 1 teaspoon oil over medium-high heat. Add the fish, secured side down and cook turning once until the bacon is crisp, about 8 minutes. Serve immediately with lemon wedges.
