These Smoked Salmon in Cucumber Boats are tasty and beautiful little morsels to serve any time of year!
Ingredients
2 medium size cucumbers
12 cherry tomatoes
1 (6-to 7-ounce) can smoked salmon, drained and flaked
¼ cup sour cream
1 tablespoon celery, minced
1 tablespoon green onion, minced
1 teaspoon fresh lemon juice
1 teaspoon fresh dill, minced
salt and freshly ground black pepper

Directions
Cut unpeeled cucumbers in ½-inch thick slices. Using a teaspoon; carefully scoop out some of the seeds from one side only. Turn upside down on a paper towel to drain. Cut the cherry tomatoes lengthwise and hollow them out. (I like to use a grapefruit spoon for this.)
In a food processor, purêe the salmon, sour cream, celery, green onion, lemon juice and dill. Season to taste with salt and pepper.
Using a pastry bag and nozzle, pipe mixture into hollows of drained cucumber slices and tomatoes. Sprinkle tops lightly with paprika.
Makes about 2 to 3 dozen
